【摘要】随着社会生活发展和科技的进步，人类越来越重视从事各项活动的环境和条件的安全健康、舒适愉快。菜刀是人们日常生活中不可缺少的厨房工具，它的安全易用，它的设计对人们的生活有着重大的影响。本文即是通过对当今各类菜刀的调查研究，运用安全人机工程学的原理到菜刀设计的工作中来，并对其中不合理的部分提出问题，加以改进设计，使之最终实现以人为本的人性化设计思想，达到最佳的人机匹配，为厨师们提供一个人性化的厨房用具。

【Abstract】With the development of social life and technological
advances, more and more attention in the activities of the human environment and conditions of safety and health, comfortable and enjoyable. Daily life in the kitchen knife is an indispensable kitchen tool, it's safe to use, it is designed for people's lives has a significant impact. This article is all kinds of kitchen knife through the research of today, the use of safety knives ergonomic design principles to work in the past, and some of the unreasonable questions, to improve the design, so that ultimately the people-oriented human Design thinking, to achieve the best human match for the chef to provide a user-friendly kitchen appliances.
